SOPP Stir Fry! (Sausage, Onions, Potatoes and Peppers!)

Last night I made a stir fry that my husband and I truly enjoyed. I don't remember how I came across this recipe on Allrecipes.com, by "cowboysjenn," but it looked interesting enough to try.

I did make it my own, however, by adding some spice and marinade to jazz it up a bit. It looked delicious on its own but I just felt it needed something to tie it together. Plus my husband and I really like flavor!! So the recipe below is my version - if you don't like spice or marinade, or can't eat it that way, refer to the original recipe in the link above.

Besides being incredibly tasty, this recipe is very easy to make. I also used 6 of those smaller red potatoes instead of 6 baking potatoes and we had plenty for the 2 of us - enough for 2 nights. Also, I only used 1 pepper, a half an onion and 2 and a half links of sausage - no where near the amount of what the original chef used. I could see using the bigger amounts of ingredients if you need to feed 8 people.

We used Trader Joe's chicken and sweet apple sausage. We love their chicken sausages - though my favorite is the mango chicken one.

From chopping to cooking, I think this whole thing took maybe a half hour to make. We ate it over some whole wheat cous cous, but for leftovers, we are going to make heroes!

The recipe is versatile in the type of sausage you like and what kind of seasonings you'd want to use, so experiment and try it out! I know my combination was very enjoyable in my house!

Ingredients:

2 tablespoons vegetable oil
6 small - medium red potatoes - peeled (if desired) and cubed
2 1/2 links Trader Joe's Chicken & Sweet Apple Sausage, sliced
1/2 onion, sliced or chopped (I chopped it)
1 bell pepper mix, chopped (I used the Trader Joe's frozen pack of red, orange, green and yellow peppers, equivalent of 1 bell pepper)
salt
black pepper
garlic powder
Worcestershire sauce
Teriyaki Sauce
sugar

Directions:

Heat oil in a large skillet over medium heat.

Place the potatoes in the skillet. Add salt, pepper and garlic powder to taste.

Cover and simmer, turning occasionally, until potatoes are almost tender and a little browned, about 10 minutes.

Stir in the sausage, onion and peppers.

Cover and cook for about 5 more minutes, or until onion and peppers are to desired tenderness.

Mix at least a teaspoon of Worcestershire sauce, a teaspoon of Teriyaki sauce and dash of sugar together for a very tiny amount of marinade - just enough to flavor the stir fry barely. Use more if you want it more saucy.

Stir the sauce in last and serve warm.

Enjoy!!

Grilled Ravioli!

Deeper into Spring and the grilling is easy! Tonight we tried grilled ravioli (something my husband probably saw on some Food Network program since he suggested it).

We had just splurged at our new favorite grocery store since they were having their delicious homemade ravioli on sale, 3 for $10 - not bad when each package is usually $4.99. So we grilled up one of the packages.

Since we already really enjoy eating ravioli and chicken sausage together, we also grilled up some of our Mango Chicken sausage we get from Trader Joe's. Also grilling were some sliced red and orange peppers that had a drizzling of olive oil and sea salt.

For a dipping sauce, I whipped up a batch of garlic butter sauce that I have previously made, since we weren't in the mood for a red sauce or a cheese sauce.

All of these grilled items, plus the sauce, made for a very tasty Sunday night dinner. The grilled ravioli is definitely a different pasta experience. It tastes similar to a puff pastry with some cheese filling - I did not feel like I was eating pasta. But, I really liked it none the less.

It was simple to make the ravioli. I put the raviolis into a zip-lock bag with a little bit of olive oil and some salt and pepper. I closed it and then shook it up so everything got a good coating of the 3 ingredients.

We had the grill heated up to a low-medium temperature (which was the temperature recommended to cook these that I found online). 2-3 minutes on each side was just enough. The ravioli will slowly start to puff up.

We were happy we tried this, and we will add it to our grilling rotation for the summer. Try it out!

What are your favorite foods to grill?

Pot Pie on Pi Day! (and with Sausage!)

Monday was Pi day, 3-14...aka 3.14. Channel your inner math geek. To tell you the truth, I forgot this year as I was home from work, and didn't watch the news so I didn't hear any of the usual Pi day jokes or announcements. The only reason I remembered is because one of my friends posted up a message on Facebook saying that in honor of Pi day, her family was having their annual chicken pot pie dinner.

I thought that it was so adorable that they had a tradition for this random day in March, and it also made me want to make my own pot pie for dinner. I did a quick search for recipes, to see if I could find something "different."

I found this one for vegetable pot pie. It was easy enough, and I had all the ingredients but two - two that were easy enough to get. Since I was heading to the store anyway, I added those ingredients to my list and off I went. And I was excited that this gave me an excuse to finally use the remaining pie crust I had frozen in my freezer for quite a while.

I felt like this needed something with more substance, but didn't want to use chicken or turkey like normal. Instead, we had mango chicken sausage in our freezer and I felt that was make a new and different taste to the pot pie. And, it did. It ended up turning out pretty great, so I am glad I thought to pair this with my dish.

Ingredients:

1 (10.75 ounce) can condensed cream of potato soup **
1 (15 ounce) can of mixed vegetables ***
½ cup milk
½ teaspoon dried thyme
½ teaspoon ground black pepper
2 (9 inch) prepared pie crusts – thawed if frozen kind
1 egg, lightly beaten
Dash of water
1 link of chicken mango sausage from Trader Joes, sliced and diced

** note… I had trouble finding cream of potato soup in a can near me so I found a pouch of powder cream of potato soup, where I had to add water to it and heat. So I made that batch first and let it cool down.

***I also bought a can of white potatoes and diced up a few to throw into the pot pie for some extra tater-ness.

Directions:

Preheat oven to 375 degrees F (190 degrees C)

In a pie dish, lay out the bottom crust.

In a medium bowl, combine potato soup, vegetables, sausage, potato, milk, thyme and black pepper.

Spoon filling into bottom pie crust.

Cover with top crust and crimp edges to seal.

Slit top crust (if desired, and looking back, I wish I slit a Pi sign, not an X!).

Prepare egg wash by beating the egg and mixing it with a little bit of water. Brush over the top crust.

Bake for 45 minutes – remove from oven and cool for 10 minutes before serving.

My husband and I were both pleasantly surprised at how the addition of the sausage turned out and this ended up being a very quick and easy dish that I threw together in the afternoon.

The picture below is the beautiful pot pie that my friend (the one who inspired me to cook my own pot pie) made. And below that, is the very detailed recipe she used to make her pot pie entirely from scratch - very impressive!! I don't know if I could pull that off just yet. So check out her recipe and hopefully you are confident enough to try it from scratch! She used Mark Bittman's recipe from his cookbook How to Cook Everything.

And, thanks for inspiring me JT!

Filling:

1 whole chicken, 3-4 pounds, trimmed of excess fat
2 onions, quartered
3 bay leaves
10 whole black peppercorns
Salt
1 recipe Savory Tart Crust (below), chilled
2 tablespoons butter, plus more for greasing the baking dish
1 cup pearl onions, peeled (frozen are fine)
2 large or 4 small to medium carrots, diced
2 tablespoons all-purpose flour
1 Tablespoon chopped fresh sage or 1 teaspoon dried sage
Freshly ground black pepper
1/2 cup cream
1 cup peas (frozen are fine; don't bother to thaw)
1 egg beaten

1: Put the chicken and onions in a large pot with just enough water to cover. Bring to a boil over medium-high heat, then immediately reduce the heat to medium-low. Skim any foam that rises to the surface. Add the bay leaves, peppercorns, and a generous pinch of salt. Simmer until the chicken and vegetables are nearly tender and the chicken is cooked through, about 45 minutes; the bird is done when an instant-read thermometer inserted into the thickest part of the thigh reads 155-165

2: Remove the chicken to cool and save the cooking liquid. (This is a good time to make the tart dough if you haven't already done so.)

3: Remove the chicken meat from the bones, roughly chop or pull into pieces, and reserve. Return the carcass to the pot (break the pieces up a bit so they're all submerged, but don't add any more water), and bring the liquid back to a boil. Reduce the heat so the liquid bubbles steadily and cook, stirring occasionally, for 20 minutes or so. Strain into a wide pot, bring the liquid to a boil, and reduce until you have about 1 1/2 cups, 10 to 30 minutes, depending on how much you started with. (At this point, the chicken and cooking liquid may be stored separately in the refrigerator for up to 2 days.) If you're baking the pie now, heat the oven to 375 and generously grease a 2-quart baking dish.

4: Put 2 tablespoons butter or oil in a deep skillet over medium heat. When the butter is melted or the oil is hot, add the onions and carrots and cook, stirring frequently, until just beginning to soften, about 5 minutes. Reduce the heat to medium-low and stir in the flour; continue cooking and stirring until it just turns tan. Add teh sage and cook and stir for another minute. (At this point you can refrigerate the vegetable mixture for up to a day, then reheat just before proceeding.)

5: Add the chicken-cooking liquid and the cream to the vegetable-flour mixture and turn the heat up to medium. Cook, stirring constantly, until the mixture begins to bubble and thicken, but don't let it come to a rolling boil. Taste and adjust the seasoning, turn off the heat, and stir in the chicken pieces and the peas. Put the mixture into the prepared baking dish. (At this point, you may cover and refrigerate the filling for up to a day; bring to room temperature before proceeding.)

6: Roll out the tart crust large enough to cover the baking dish. Lay it on top of the dish and flute it as for a piecrust or just leave it draped over the sides a little. Use a sharp knife to cut 3 or 4 vents in the top. Brush the top with the beaten egg. Bake for 50 or 60 minutes, until the crust is deeply golden and the filling is bubbling.

Savory Tart Crust

1 1/2 cups all-purpose flour
1/2 teaspoon salt
10 tablespoons frozen or cold unsalted butter
1 egg yolk
3 tablespoons ice water, plus more if necessary

1: Combine the flour and salt in a food processor and pulse once or twice. Add the butter all at once; process until the mixture is uniform, about 10 seconds (do not overprocess). Add the egg yolk and process for another few seconds.

2: Put the mixture in a bowl and add 3 tablespoons ice water; mix with your hands until you can form the dough into a ball, adding another tablespoon or two of ice water if necessary (if you overdo it and the mixture becomes sodden, add a little more flour). form into a ball, wrap in plastic, and freeze for 10 minutes or refrigerate for at least 30 minutes. (You can refrigerate for up to a couple of days or freeze, tightly wrapped, for up to a couple of weeks.)

3: Sprinkle a countertop with flour and put the dough on it; sprinkle the top with a little flour. Use a rolling pin to roll with light pressure from the center out. If the dough is sticky, add a little flour (if it continues to become sticky, and it's taking you more than a few minutes to roll it out, refrigerate or freeze again). Roll, adding flour and rotating and turning the dough as needed; use ragged edges of dough to repair any tears, adding a drop of water while you press the patch into place. The dough is ready when it is two inches larger than your baking dish.

Sunday Game Day Snack - Asian Style Nachos

Today's Game Day snack is an interesting one. Last night we got Mexican for dinner and had a ton of leftover tortilla chips, so we said we would use them for the Game Day snack, but I wanted to find something different.

I searched the Web for recipes including tortilla chips. One thing that stood out to me was BBQ Nachos - the creator used BBQ sauce and sausages as well as cheese on top of tortilla chips.

That sparked something in my mind - just yesterday we bought Mango Chicken Sausage at Trader Joes. It's a sweeter sausage, so I didn't think the BBQ sauce would go well with it - but in the past we paired this particular sausage with Asian flavors. Therefore, I decided to create Asian Style Nachos.

I made 2 different versions - one with rice, but no cheese, and one with cheese and no rice! I didn't pair the two together, I just didn't think it would taste good. The rice came into play when I opened the fridge and saw a bunch of white rice I made the other night that we had leftover.

Leftovers are GREAT for the Sunday Game Day snacks! It really makes it easier to throw something creative and tasty together, without wasting food from previous nights.

Here are my ingredients:

prepared white rice
onion - chopped
yellow bell pepper - chopped
mango chicken sausage - chopped
shredded provolone cheese
tortilla chips
sesame ginger vinaigrette sauce

First I sauteed the onion, chicken sausage and pepper in a small skillet with a dash of olive oil and the sesame ginger sauce.

Then I prepared 2 batches of chips. The rice and cheese went down first on each of their piles, followed by the onion, pepper and sausage, along with a dash more sauce.

I baked it for about 20 minutes at 350 degrees F.

It turned out great!! My husband said they were delicious after the first bite, and it was a toss up between the rice and cheese which he liked better. I liked the rice better, but they were messy because nothing was binding the chips together. I think next time I would put a very small layer of cheese down as well so they stick together better.

This recipe is very versatile depending on what kind of sausage you like. You could try using BBQ flavors or stick with Mexican flavors. But we like nachos a lot on game day - seems to be a very easy snack to make and munch on.

Enjoy!

"Fancy" Ravioli

So... we had some ordinary ingredients in the house and I wanted to do something with them that was more than ordinary. We had some frozen ravioli and had purchased a package of sausage from Trader Joe's. We're not really sausage people but we like the chicken sausage from Trader Joe's.

My husband will eat almost any flavor - sweet or savory. Last time we got a spinach and cheese chicken sausage. It was OK...but I am more a sweet sausage person. I like the kind with apple in or something. This time we tried chicken sausage with mango in it and it was delicious!! Sausagey with a hint of sweetness in the end. Yum!

Anyway, I wanted to combine these two products. So I boiled up the ravioli and baked the sausage in the oven for about 10 - 15 minutes.

When they were ready, I combined the two. My husband only wanted a red sauce, so he used some jarred Marinara that we had in the house and added some crushed red pepper flakes and parsley flakes.

I tend to shy away from red sauces a lot because they sometimes hurt my stomach - so I made a simple white sauce (recipe below) and grated some fresh Parmesan on top. I also added some parsley flakes.

The result (on both ends) was delicious! It was a simple meal that I was able to put together after work in about 20-25 minutes, but I dressed it up a bit so it didn't seem so ordinary.

Hooray for quick, easy and delicious meals!!

Have you created something quick and easy from random products in your kitchen?

Here is the white sauce recipe that I used for my pasta:

3 TBSP olive oil
2 TBSP flour
3/4 cup milk
1/4 cup white wine (skip this and use 1 full cup of milk if you don't want wine)
1 tsp granulated onion powder
1/2 tsp granulated garlic powder
salt & pepper to taste
1 1/2 TBSP Parmesan cheese - the bottle kind, not fresh
1/2 TBSP Italian seasoning

mix all ingredients in order of list in a saucepan over medium heat. more milk can be added if you want a thinner sauce.
